Extra Virgin Olive Oil, our passion. We are a family business, in its forth generation of olive growers and field lovers, that passes on a dose of real knowledge gained through experience, and improved thanks to the technical and academic preparation of its manager, a Technical Agricultural engineer, tasting expert and with a Master from the Instituto de la Grasa (CSIC).
The crop is located in the municipality of Carmona, in the heart of the county named “Alcores” (which means hills), in the province of Seville. This area, rich in heritage and landscape, rises in front of the “campiña de los Alcores” (countryside of the Alcores).
From the olive harvest to the bottling of the Extra Virgin Oil, the strictest controls are followed in order to obtain the highest quality of our product.
Above all, we are olive growers, and therefore we do our utmost to ensure that the fruit gets to the oil mill in its best conditions. This is why we undertake strict checks throughout the year in order to solve any abnormality in the correct ripening of the fruit.
We harvest from half October until November (early harvesting) to obtain the greenest and most aromatic extra virgin olive oil. During the process of grinding (6 hours before the harvest) we do not exceed 27°C. This process is known as “cold extraction” and it ensures that all aromas, natural antioxidants, polyphenols are preserved and obtaining and an exceptional flavour.
